contribuer à la mission d'intérêt général de préservation et de mise en valeur des terroirs, des traditions locales et des savoir-faire ainsi que des produits qui en sont issus ; élaborer le projet de cahier des charges, contribuer à son application par les opérateurs et participer à la mise en oeuvre des plans de contrôle ou d'inspection, notamment par la mise en place du contrôle interne ; tenir à jour la liste des opérateurs qu'il transmet périodiquement à l'organisme de contrôle et à l'Institut National et l'origine et la qualité; participer aux actions de défense et de protection du nom, du produit, du terroir, à la valorisation du produit ainsi qu'à la connaissance statistique du secteur; mettre en oeuvre les décisions du comité national qui le concernent ; proposer à l'INAO l'organisme qui sera chargé de contrôler le cahier des charges; élaborer conjointement avec l'organisme de contôle un plan de contrôle ou d'inspection; participer à la promotion du lait cru dans la filière
